Feta lasts 1–2 weeks once opened, refrigerated below 4°C — and much longer (a month+) if kept submerged in its brine. The salty brine is what preserves it; dry feta dries out and tastes harsh. Sealed vacuum-packed feta keeps months past the printed date when refrigerated. Sour, fizzy, or ammonia smell means it's done. Mold on feta is more serious than on hard cheese — when in doubt, throw it out.
