Keep bananas on the counter at room temperature until ripe — never refrigerate green bananas. Once spotted and ripe, transfer to the fridge to slow further ripening (peel blackens but flesh stays good). Don't store next to apples, tomatoes, or other ethylene-producing fruit unless you want everything to ripen at once. A banana hanger or hook keeps them off surfaces and prevents bruising. To slow ripening of bunches, wrap the stem in plastic — it blocks the ethylene that the stems release.
