How to store Mozzarella

In the freezer: 90 days
Keep fresh mozzarella in its brine in the original container — if you transfer to a different container, use lightly salted water or whey to prevent osmotic damage. Refrigerate at 4°C. Low-moisture mozzarella goes in a sealed bag in the cheese drawer. Once opened, use within a few days; bring to room temperature before serving for best flavor. Freeze shredded portions; don't freeze fresh balls.

Can you freeze mozzarella?
Shredded mozzarella freezes well for cooking. Fresh mozzarella loses texture and isn't worth freezing.
Why is my mozzarella slimy?
Slimy texture means bacteria have taken over. Discard immediately.
